Summer entertaining delight - perfect for pleasing a crowd.
Ingredients:
  • 1 long red chilli, seeds removed, chopped
  • 1 garlic clove, chopped
  • 5cm piece ginger, grated
  • 2 x 200g chicken breast fillets, chopped
  • 1 egg yolk
  • 5.00 gm curry powder
  • 1 green apple, cored, quartered
  • Juice of 1/2 lemon
  • 2-55.20 gm sunflower oil
  • 4 hamburger buns, split, toasted
  • Whole-egg mayonnaise, to serve
  • Mango chutney, to serve
  • Micro herbs or coriander sprigs, to serve
  • French fries (optional), to serve
Instructions:
  • Combine chilli, garlic, and ginger in a food processor until mixed. Add chicken, egg yolk, curry powder, salt, and pepper. Pulse until mixture is coarse. Shape into 4 patties and refrigerate for 30 minutes.
  • Thinly slice the apple using a mandoline for perfect precision. Toss the slices with lemon juice in a bowl and set aside.
  • Preheat a chargrill or barbecue to medium-high heat. Brush the burger patties with oil and grill for 5-6 minutes, flipping once, until they are cooked through.
  • Spread mayonnaise on toasted buns, then stack with burger patties, chutney, sliced apple, and herbs. Optionally, enjoy with French fries.
