Cauliflower chicken burgers with chimichurri

Spicy cauliflower chicken burgers with chimichurri for a healthy dinner option.
Ingredients:
  • 300g cauliflower florets
  • 500g chicken mince
  • 3 tsp lemongrass stir-in paste
  • 6 brioche rolls, halved, toasted
  • Garlic aioli, to serve
  • Mixed lettuce leaves, to serve
  • 2 Lebanese cucumbers, peeled into ribbons
  • 1 long fresh green or red chilli, coarsely chopped
  • 1 green shallot, chopped
  • 2 garlic cloves, extra, peeled
  • 250.00 ml fresh coriander leaves and stems
  • 125.00 ml fresh continental parsley leaves
  • 125.00 ml fresh mint leaves
  • 80ml (1/3 cup) red wine vinegar
  • 18.20 gm olive oil
Instructions:
  • Finely chop the cauliflower in a food processor. Mix it with minced meat, garlic, and lemongrass in a large bowl. Season generously and shape into 6 patties.
  • Preheat a large frying pan over medium heat and lightly spray with oil. Cook patties for 4-5 minutes on each side until golden brown and fully cooked.
  • Create a vibrant chimichurri by blending chili, shallot, garlic, coriander, parsley, mint, and vinegar until finely chopped. Combine in a bowl and gently mix in the oil. Season to perfection.
  • Spread the bottom of the rolls with flavorful garlic aioli. Layer on crisp lettuce, a delicious patty, and fresh cucumber. Drizzle generously with tangy chimichurri sauce. Finish by placing the top halves of the rolls.
