Cauliflower Chicken Fried Rice

Delicious cauliflower rice stir-fry with chicken and veggies cooks fast and is a healthier option than traditional stir-fry.
Ingredients:
  • 0.75 pound skinless, boneless chicken breasts, cut into small cubes
  • 6 tablespoons soy sauce, divided
  • 1 tablespoon brown sugar
  • 2 teaspoons sesame oil, divided
  • 1 teaspoon cornstarch
  • 3 tablespoons vegetable oil
  • 5 scallions, chopped, light and dark green parts separated
  • 4 garlic cloves, minced
  • 1 (1 1/2 inch) piece fresh ginger, grated
  • 2 pounds cauliflower rice
  • 1 teaspoon kosher salt, divided
  • 1.5 cups frozen peas and carrots
  • 2 eggs, beaten
  • 0.5 cup finely diced fresh pineapple
  • 0.25 cup chopped peanuts
  • 1 tablespoon rice vinegar
Instructions:
  • Combine chicken, 1 tablespoon soy sauce, brown sugar, 1 teaspoon sesame oil, and cornstarch in a large bowl and mix well.
  • Preheat a wok or large saucepan over high heat. Add 1 tablespoon of vegetable oil and swirl to coat. Spread the chicken mixture in a single layer over the surface of the wok and cook for 1 minute. Flip and toss the chicken, then spread it out again. Cook and stir for an additional 2 minutes. Finally, transfer the cooked chicken to a plate.
  • Warm up the remaining 2 tablespoons of vegetable oil in the wok over medium heat. Throw in the light green part of the scallions, garlic, and ginger, and sauté until aromatic and softened, which should take about 1 to 2 minutes.
  • In a hot wok, combine 4 tablespoons of soy sauce, cauliflower rice, and 1/2 teaspoon of salt. Cook until the cauliflower becomes slightly crisp, approximately 3 minutes. Add peas and carrots to the wok and continue cooking until warmed through, stirring occasionally, about 5 minutes.
  • Create a space in the middle of the wok and add the beaten eggs. Use a spatula to scramble the eggs for about 2 minutes. Then, mix in the chicken, 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, dark green scallion parts, pineapple, peanuts, and rice vinegar.
