Make chicken mince patties in tortilla wraps for a healthier twist on classic burgers.
Ingredients:
  • 500g chicken breast, minced (see note)
  • 2 eggwhites
  • 2.50 gm ground cumin
  • 2 green onions, sliced
  • 165.00 ml coriander leaves, chopped
  • Olive oil cooking spray
  • 6 corn tortillas
  • 375.00 ml shredded lettuce
  • 2 tomatoes, sliced
  • 125.00 ml mild tomato salsa, to serve
Instructions:
  • In a bowl, mix together chicken mince, egg whites, paprika, cumin, garlic, onions, 1/2 cup coriander leaves, and a pinch of salt until well combined. Shape the mixture into six 7cm patties using 1/3 cup per patty.
  • Heat up the barbecue plate or non-stick frying pan over medium heat. Lightly coat both sides of the patties with oil. Cook for 4 to 5 minutes on each side or until fully cooked. Transfer to a plate and cover to maintain warmth.
  • Brush both sides of the tortillas lightly with oil. Grill for 1 minute on each side or until heated through. Place on individual plates. Top each tortilla with a patty, lettuce, tomato, the rest of the coriander, and 1 tablespoon of salsa. Fold the tortilla in half and secure with a toothpick. Serve and enjoy!
