Delicious, healthy Thai chicken burgers with sweet chili sauce.
Ingredients:
  • 550g Free Range Chicken Mince
  • 56.00 gm Thai red curry paste
  • 2 green onions, finely chopped
  • 90.75 gm sweet chilli sauce
  • 1 egg, lightly beaten
  • 82.50 ml low-fat cottage cheese
  • 125.00 ml dried breadcrumbs
  • 48.80 gm fish sauce
  • 21.00 gm reduced-salt soy sauce
  • 125.00 ml coriander leaves, roughly chopped
  • Olive oil cooking spray
  • 6 multi-grain or wholemeal bread rolls, halved
  • 2 carrots, peeled, sliced into ribbons
  • 100g snow pea sprouts, trimmed
Instructions:
  • Mix together mince, curry paste, onions, 1 tablespoon sweet chilli sauce, egg, cottage cheese, breadcrumbs, fish sauce, soy sauce, and coriander until fully combined.
  • Take 1/2 cup of the mixture and form it into 6 patties that are 3cm thick. Place the patties on a tray, cover, and refrigerate for 30 minutes.
  • Preheat the grill to medium heat. Lightly coat the patties with oil. Grill for 12 minutes, flipping occasionally, until fully cooked.
  • Place rolls cut-side down on a hot pan and cook for 1 minute until golden and crispy. Spread the roll bases generously with the remaining sweet chilli sauce. Top with the patties, carrot slices, sprouts, and the roll tops. Serve and enjoy!
