Thai-inspired chicken slaw burgers - a must-try new favorite!
Ingredients:
  • 8 hamburger buns, split
  • 2 tablespoons butter
  • 0.5 onion, chopped
  • 2 tablespoons tomato paste
  • 2 cloves garlic, minced
  • 3 tablespoons Thai sweet chili sauce, or more to taste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon white sugar
  • 2 pounds boneless, skinless chicken breast, or more to taste, cut in bite-size pieces
  • 2 tablespoons olive oil
  • 3 tablespoons sweet pickle relish
  • 3 tablespoons lemon juice
  • 2 tablespoons honey
  • 2 cups coleslaw mix
Instructions:
  • Place hamburger buns on a baking sheet with cut-sides facing up, then preheat the broiler with the oven rack 6 inches away from the heat source.
  • Place buns in the hot broiler until golden and crispy, for about 30 to 60 seconds.
  • In a large skillet over medium heat, melt butter until sizzling. Sauté onion, tomato paste, and garlic in the fragrant butter until the onion is tender, approximately 5 minutes. Mix in chili sauce, Worcestershire sauce, and sugar to enhance the flavors.
  • Combine chicken and flavorful olive oil in a skillet, cook until chicken is fully cooked through, which should take 5 to 10 minutes.
  • In a large bowl, mix together relish, lemon juice, and honey until well combined. Add coleslaw blend and toss until evenly coated.
  • Fill toasted buns with chicken mixture and top with coleslaw.
