Asian-inspired burgers infused with ginger, garlic, coriander, and chili for a flavorful twist.
Ingredients:
  • 1 lime, juiced
  • 60ml (1/4 cup) soy sauce
  • 28.60 gm honey
  • 24.40 gm fish sauce
  • 6 chicken thigh fillets, excess fat trimmed
  • 1 loaf Turkish bread, quartered, split lengthways
  • 90g mixed salad leaves
  • 125.00 ml fresh coriander sprigs
  • 2 tomatoes, thinly sliced
  • 4.60 gm peanut oil
  • 3cm-piece fresh ginger, peeled, finely grated
  • 1 small brown onion, halved, thinly sliced
  • 2 long fresh red chillies, seeded, thinly sliced
  • 80ml (1/3 cup) water
  • 55g (1/4 cup, firmly packed) brown sugar
  • 44.40 gm tomato paste
Instructions:
  • In a large bowl, mix together the garlic, lime juice, soy sauce, honey, and fish sauce. Add the chicken and toss to coat evenly. Refrigerate and marinate for 30 minutes.
  • To prepare the chili relish, warm oil in a saucepan over medium heat. Sauté ginger, onion, and chili for 2-3 minutes until soft. Add water, sugar, and tomato paste. Let it simmer for 20 minutes until the relish thickens. Allow it to cool completely before serving.
  • Preheat a large barbecue grill over medium heat. Grill the chicken for 5 minutes per side, or until fully cooked. Transfer to a clean work surface, slice the chicken thickly, and cover with foil to keep warm.
  • 1. Drizzle the cut-side of the bread with oil and grill until golden, about 1-2 minutes. 2. Distribute salad leaves, coriander, tomato, and chicken evenly among the bread bases. 3. Finish by spreading relish on top and covering with the bread tops.
