Barbecued Thai-style chicken legs

Master crispy BBQ chicken legs with my foolproof tips.
Ingredients:
  • 4 free-range chicken legs
  • 1 bunch of fresh coriander
  • 2 sticks of lemongrass
  • 3 cloves of garlic
  • 5 cm piece of ginger
  • 2 limes
  • 1 fresh green chilli
  • sunflower oil
Instructions:
  • Score the chicken legs with a knife. Set aside coriander leaves and blend the stalks with lemongrass in a food processor. Grate garlic, ginger, and lime zest into the processor. Add lime juice, chili, and 2 tablespoons oil, blend into a paste. Massage the paste into the chicken slashes, cover, and refrigerate for at least 2 hours. Barbecue the chicken on a hot side first, then move to a cooler side to finish cooking. Garnish with coriander leaves before serving. Enjoy with napkins handy!
