Sweet Caroline pulled chicken burger with Carolina-style BBQ sauce

Indulge in a zesty pulled chicken burger from Chur Burger, with creamy avocado salsa, aioli, and spicy jalapeño.
Ingredients:
  • 2 avocados diced
  • 2-3 whole Jalapeños
  • 5 Helga’s Gluten Free Gourmet Rolls Traditional White
  • 4 chicken Maryland’s (skin off)
  • 32.00 gm brown sugar
  • 20.00 ml tin chipotle paste
  • 2.50 gm paprika
  • 2.50 gm ground cumin
  • 2.50 gm ground ginger
  • 1 teabspoon chopped coriander
  • 1 lime, zested juiced
  • Sea salt
  • 200g American mustard
  • 100g sugar
  • 50g brown sugar
  • 200ml cider vinegar
  • 60ml water
  • 2 tsp chilli powder
  • 2 tsp ground black pepper
  • 2.50 gm smoked paprika
  • 24.40 gm Worcestershire sauce
  • 30g butter
  • 1/4 red onion finely diced
  • 1 red chilli (deseeded) finely diced
  • 4.00 cloves garlic pasted to purée
  • 1 lime, zested and juiced
  • 1/2 bunch coriander finely chopped
  • Sea salt to taste
  • 120g mayonnaise
  • Pinch sea salt
Instructions:
  • Blend all ingredients thoroughly and massage onto chicken Marylands until completely covered.
  • Position a rack in a deep tray filled halfway with water. Arrange chicken on the rack and bake in a preheated oven at 180 degrees C for around 30 minutes. Ensure chicken is thoroughly cooked before taking it out of the oven.
  • Allow the dish to cool until it's easy to handle, then delicately shred all the meat from the bones and set aside.
  • Drizzle the BBQ sauce to your desired preference.
  • Season generously with fragrant sea salt, then sprinkle with the aromatic chopped coriander, and finally, drizzle with a burst of zesty fresh lime juice.
  • In a small saucepan, mix together mustard, sugars, vinegar, water, chili powder, black pepper, paprika, and Worcestershire sauce to create the Carolina sauce.
  • Slowly let it cook over a gentle flame for half an hour.
  • Add the butter and let it simmer for another 10 minutes.
  • Combine all the ingredients for the avocado salsa, being careful not to over-mash the avocados.
  • Chill and allow flavors to meld by seasoning with sea salt to taste before serving.
  • Combine the ingredients for the aoili thoroughly and chill until ready to use.
  • Toast Helga's Gluten-Free Gourmet Roll Traditional White until golden and then brush with melted butter for a decadent finish.
  • Place a generous portion of pulled chicken on the bottom half of the roll coated with BBQ sauce, then drizzle a bit more sauce on top.
  • Top with a generous tablespoon of avocado salsa.
  • Drizzle the salsa with 20g of creamy aioli.
  • Top with 3-4 thinly sliced fresh jalapeños, then serve.
