Mushroom Mint Pasta Salad

Savory mushroom pasta with mint, perfect as a chilled salad for BBQs or warm side dish for French/Italian meals. Sprinkle with cracked pepper and garnish with fresh mint leaves before serving.
Ingredients:
  • 1 (16 ounce) package farfalle (bow tie) pasta
  • 0.25 cup olive oil, divided
  • 2 (8 ounce) packages button mushrooms, sliced
  • 4 onions, sliced
  • 1 quart heavy cream
  • 10 sprigs fresh mint
  • 1.5 teaspoons white sugar
  • 1 pinch salt
  • 1 pinch ground black pepper
Instructions:
  • 1. In a large pot, boil salted water. Add pasta and cook until al dente, about 8 to 10 minutes. Drain and cool. Transfer to a large bowl and mix with 3 tablespoons of olive oil.
  • In a large skillet over medium heat, heat the remaining olive oil. Add mushrooms and onions, cooking and stirring until lightly browned. Slowly pour in the heavy cream while stirring constantly. Add the mint sprigs and cook, stirring, for 5 minutes.
  • Blend the sugar into the cream sauce, then season with salt and pepper. Using a slotted spoon, remove the mint sprigs. Incorporate the cooked pasta until fully coated.
