Fresh spring pasta with sugar snap peas, mushrooms, garlic, lemon, Parmesan, and mint.
Ingredients:
  • 8 ounces penne pasta
  • 1 (6 ounce) package sugar snap peas, or as desired
  • 2 tablespoons olive oil, or more to taste
  • 1 tablespoon margarine
  • 8 white mushrooms, sliced
  • 2 green onions, minced
  • 1 clove garlic, minced
  • 1 lemon, zested
  • 1 tablespoon lemon juice
  • 0.25 cup grated Parmesan cheese
Instructions:
  • 1. Boil generously salted water in a large pot. Add penne and cook for 6 minutes, stirring occasionally. Introduce sugar snap peas to the bubbling pasta and cook for an additional 3 minutes until pasta is al dente. Drain well.
  • Place the pot back on the stove and warm up olive oil and margarine over medium heat. Add mushrooms, green onions, garlic, and lemon zest, stirring occasionally until aromatic, for approximately 2 minutes. Mix in lemon juice and season with salt and pepper. Fold in cooked pasta and sugar snap peas, ensuring they are well coated. Finish by garnishing with Parmesan cheese and fresh mint.
