Pesto Shrimp Pasta

Whip up a flavorful basil pesto to toss with spaghetti, shrimp, and sugar snap peas.
Ingredients:
  • 1 (8 ounce) package spaghetti
  • 1 cup fresh basil leaves
  • 0.25 cup lemon juice
  • 3 tablespoons olive oil
  • 1 clove garlic, or to taste
  • 0.5 teaspoon salt
  • 2 teaspoons olive oil
  • 1 (8 ounce) package sugar snap peas
  • 0.75 pound peeled and deveined shrimp
  • 0.125 teaspoon crushed red pepper
Instructions:
  • Boil a large pot of salted water. Cook spaghetti until al dente, about 12 minutes. Drain.
  • Combine fresh basil leaves, tangy lemon juice, 3 tablespoons of rich olive oil, aromatic garlic, and a pinch of salt in a blender and blend until a smooth, flavorful mixture is achieved.
  • Warm 2 teaspoons of olive oil in a skillet over medium heat. Sauté sugar snap peas in the fragrant oil until tender, approximately 5 minutes. Introduce shrimp and red pepper to the pan; sauté until the shrimp turn bright pink on the outside and are no longer translucent in the center, around 5 minutes. Gently blend in basil sauce with the shrimp medley, then take it off the heat. Serve over spaghetti with a generous spoonful of the flavorful mixture.
