Whip up a vibrant pesto pasta sauce with peas, spinach, and basil. Top with shrimp or chicken for a simple, flavorful meal.
Ingredients:
  • 1 pound uncooked pasta
  • 1 (15 ounce) can Del Monte® Sweet Peas, drained
  • 1 cup packed fresh spinach leaves
  • 1 cup packed fresh basil leaves
  • 0.33333334326744 cup grated Parmesan cheese, plus more for optional topping
  • 0.25 cup olive oil
  • 0.25 cup chopped walnuts
  • 2 cloves garlic, peeled
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 Chopped fresh tomatoes
Instructions:
  • Prepare pasta as per the instructions on the package.
  • Place peas, spinach, basil, Parmesan cheese, olive oil, walnuts, garlic, salt, and pepper in a blender or food processor.
  • Just before the pasta finishes cooking, transfer 1/2 cup of hot pasta cooking water to a blender. Blend until smooth, scraping the sides and adding more pasta water as needed.
  • After cooking the pasta, gently drain it and place it back in the pot. Mix in the sauce and stir to cover the pasta completely. Sprinkle with salt and pepper to taste. Serve promptly, topped with extra Parmesan cheese and tomatoes, if desired.
