Sweet Pea Soup with Bacon

Savor a comforting sweet pea and potato soup with savory Progresso™ chicken broth for dinner.
Ingredients:
  • 6 slices low-sodium bacon
  • 1 1/2 cups refrigerated cooked diced potatoes with onions (from 20-oz bag)
  • 1 carton (32 oz) Progresso™ reduced-sodium chicken broth (4 cups)
  • 1 bag (12 oz) frozen baby sweet peas
  • 1/2 cup fat-free half-and-half
  • 1/4 teaspoon freshly ground pepper
Instructions:
  • Cook the bacon in a 4-quart nonstick saucepan or Dutch oven until it's crisp. Once cooked, drain the bacon on paper towels, crumble it, and set it aside. Leave 2 tablespoons of drippings in the pan and discard any excess drippings.
  • In a skillet, sizzle potatoes in the flavorful bacon drippings until golden for about 5 minutes. Stir in broth and peas, bring to a boil, then simmer gently for 15 minutes. Take off the heat and let it cool slightly before serving.
  • Using a blender, puree 4 1/2 cups of the soup until smooth on high speed. Pour the pureed soup back into the pan with the remaining soup. Add half-and-half and pepper, then heat for 4 minutes or until hot. Serve each portion with crumbled bacon on top.
