Sweet Pea Casserole

Holiday Southern peas dish with creamy cheddar sauce and crispy onion rings.
Ingredients:
  • 1/4 cup butter
  • 1/2 cup chopped onions
  • 2 cloves garlic, finely chopped
  • 2 tablespoons flour
  • 1/2 cup heavy cream
  • 1 cup shredded Cheddar cheese
  • 2 cans (15 oz each) LeSueur® very young small early peas, drained
  • 1 can (2.8 oz) french fried onion rings
Instructions:
  • Preheat oven to 350°F. Melt butter in a large saucepan over medium heat. Sauté onions and garlic until tender, about 2 minutes. Add flour, salt, and pepper; cook for 1 minute while stirring constantly. Gradually pour in the milk and cream; continue stirring constantly for 4 to 5 minutes until the mixture thickens.
  • Fold in the cheese until it's melted and silky. Mix in the peas with care. Transfer the mixture into an 8-inch square baking dish. Bake for 20 minutes. Sprinkle French fried onions on top and bake for an extra 5 minutes. Serve right away.
