Indulgent avocado pesto with basil, Romano cheese, and avocado adds a creamy, dairy-free twist to your shrimp pasta.
Ingredients:
  • 1 (8 ounce) package penne pasta
  • 0.25 pound uncooked medium shrimp, peeled and deveined
  • 1 medium avocado, peeled and pitted
  • 0.5 cup fresh basil leaves, or to taste
  • 4 tablespoons grated Romano cheese, divided
  • 2 cloves garlic
  • 0.5 medium lemon, juiced
  • 0.25 cup olive oil, or as needed
  • 0.25 cup diced cherry tomatoes, or more to taste
Instructions:
  • Bring a pot of salted water to a gentle boil. Cook penne until mostly done, 8 to 10 minutes. Add shrimp and cook until pink and opaque, about 2 to 3 minutes. Penne should be fully cooked by this time.
  • While the penne is cooking, in a food processor, blend avocado, basil, 2 tablespoons Romano cheese, garlic, lemon juice, salt, and pepper until smooth. Gradually add olive oil and pulse to creamy consistency. Finally, stir diced tomatoes into the pesto mixture.
  • After draining the penne and shrimp, return them to the pot. Combine with pesto, season with salt and pepper, and stir until evenly coated.
  • Sprinkle the remaining Romano cheese over the servings for a delicious finishing touch.
