Elegant finger sandwiches with delicious fillings, perfect for your special occasion party.
Ingredients:
  • 2 loaves wholemeal sliced sandwich bread
  • 2 loaves white sliced sandwich bread
  • 150g light cream cheese
  • 2 lemons, rind finely grated, juiced
  • 200g smoked salmon
  • 40.00 ml dill sprigs, chopped
  • 40.00 ml baby capers, drained
  • 375.00 ml finely shredded iceberg lettuce
  • 18.20 gm olive oil
  • 500g chicken breast fillets, sliced through centre
  • 123.75 gm whole-egg mayonnaise
  • 125.00 ml flaked almonds, toasted
  • 60g butter, softened
  • 1 large Lebanese cucumber, thinly sliced
  • 250g ricotta cheese
  • 40.00 gm basil pesto
  • 20.60 gm milk
  • 200g thinly sliced leg ham
  • 1 large avocado, peeled, stone removed, mashed
  • 50g baby spinach leaves, trimmed
Instructions:
  • Prepare filling 1 by mixing cream cheese, lemon rind, and 1 tablespoon of lemon juice in a small bowl. Spread the cheese mixture on 7 slices of wholemeal bread. Layer with salmon, dill, and capers. Spread the remaining cheese mixture on both sides of 7 slices of white bread and place them on top. Finish off by adding lettuce on top. Enjoy your delicious creation!
  • Spread a savory cheese mixture over 7 slices of wholemeal bread. Place the bread, spread side down, over a bed of crisp lettuce. Trim off the crusts and cut the sandwiches into 3 fingers for a delightful presentation.

  • Spread 7 slices of white bread with butter and place them over cucumber slices, butter side down. Trim the crusts and cut the sandwiches into 3 fingers.
  • Combine smooth ricotta cheese, flavorful pesto, and creamy milk in a bowl, whisking until well blended.
  • Spread a delicious ricotta mixture on 7 slices of wholemeal bread, then layer ham and avocado on top. Spread the same ricotta mixture on both sides of 7 slices of white bread, layer on top of the filling, and finish with fresh spinach.
  • Spread the remaining 7 slices of white bread with the ricotta mixture, place them over the spinach with the spread side facing down, trim the crusts, and cut the sandwiches into 3 fingers.
