Chicken, radish and mint finger sandwiches

Elevate finger sandwiches with zesty chicken, fresh mint, and crisp radishes.
Ingredients:
  • 1 roast chicken
  • 8 medium red radishes, washed, dried, ends trimmed, coarsely grated
  • 235g (1 cup) good-quality whole-egg mayonnaise
  • 165.00 ml finely shredded fresh mint
  • Salt & freshly ground black pepper
  • 24 slices wholemeal bread, crusts removed
Instructions:
  • Separate chicken meat from bones, discarding bones, skin, and seasoning. Shred chicken and place in a large bowl with radish, mayonnaise, and mint. Gently mix until combined. Season to taste with salt and pepper.
  • Lay out half of the bread slices on a clean surface. Add a generous layer of the flavorful chicken mixture. Place the rest of the bread slices on top to create sandwiches. Cut each sandwich into thirds lengthwise and secure them with toothpicks. Arrange beautifully on a platter before serving.
