Vibrant radish and cucumber salsa complements tender chicken schnitzels perfectly.
Ingredients:
  • 18.20 gm olive oil
  • 20g butter
  • 4 crumbed chicken breast schnitzels
  • 4 hamburger buns, split in half
  • 61.88 gm whole-egg mayonnaise
  • 4 green oak lettuce leaves
  • oven chips, to serve
  • 1 bunch radishes, trimmed, thinly sliced, cut into thin strips
  • 1 Lebanese cucumber, thinly sliced, cut into thin strips
  • 37.60 gm sour cream
Instructions:
  • Prepare a refreshing radish and cucumber salsa by tossing together crisp radish, cucumber, and creamy sour cream. Season generously with salt and pepper, then chill in the fridge until you're ready to enjoy.
  • Preheat the oven to 150°C. In a large non-stick frying pan over medium-low heat, melt a mix of oil and butter. Cook the schnitzels in batches for 6 to 8 minutes per side until fully cooked. Transfer them to a wire rack and keep warm in the oven while cooking the rest of the schnitzels.
  • 1. Preheat the grill to high heat, then toast the cut sides of the buns until they are a light golden color. 2. Place the bun bases on plates and spread mayonnaise on each one. 3. Top with lettuce, then cut the schnitzels if needed and place them on top of the lettuce. 4. Spoon salsa over the schnitzels, then cover with the bun tops. 5. Serve with chips on the side.
