Chicken-free schnitzel and avocado burger recipe

Try this quick and easy vegan chicken-free schnitzel and avocado burger - a delicious family-friendly meal!
Ingredients:
  • 4 Herb & Sons Chicken-Free Schnitzels
  • 1 corn cob, husk and silk removed
  • 1/2 red onion, finely chopped
  • 1 long red chilli, seeded, finely chopped (optional)
  • 22.00 gm sweet chilli sauce
  • 100g mayonnaise
  • 1 lime, juiced
  • 4 round bread rolls, split, toasted
  • 2 avocados, stoned, peeled, coarsely mashed
  • 40g baby rocket leaves
Instructions:
  • Preheat the oven to 180°C. Line a baking tray with baking paper, then lay the schnitzels on it. Bake for 20 minutes, turning halfway through, until they are golden brown and heated through.
  • Heat a chargrill on medium heat. Grill the corn for about 10 minutes until tender and charred, turning occasionally. Allow the corn to cool slightly. Using a small serrated knife, cut down the side of the cob to release the kernels into a bowl.
  • Combine onion, chilli (if using), and sweet chilli sauce with the corn in a bowl, stirring to combine. In a separate bowl, mix mayonnaise and lime juice together.
  • Cut each schnitzel in half. Place the bottom half of the rolls on serving plates. Spread avocado on the bottom half of the rolls. Top with schnitzel, corn mixture, and rocket. Spread the top half of the rolls with mayonnaise mixture and place on top of the burgers. Serve immediately.
