Delightful finger sandwiches for elegant high tea, perfectly sized for easy, sophisticated bites.
Ingredients:
  • 1/2 large green apple, finely chopped
  • 21.00 gm lemon juice
  • 625.00 ml chopped barbecue chicken breast
  • 2 celery sticks, finely chopped
  • 50.00 ml chopped fresh chives
  • 125g (1/2 cup) whole egg mayonnaise
  • 20.00 ml poppy seeds
  • 8.85 gm Dijon mustard
  • 16 slices soft light rye bread
  • 40.00 gm butter, at room temperature
  • Baby herbs, to decorate (optional)
Instructions:
  • In a bowl, mix the apple and lemon juice together, then add in the chicken, celery, chives, mayonnaise, poppy seeds, and mustard. Season with salt and pepper, and stir well to combine.
  • Lay out half of the bread slices. Spread butter on them, then spread the chicken mixture. Top with the remaining bread slices. Trim the crusts off with a serrated knife. Cut each sandwich into thirds lengthways and garnish with baby herbs, if desired.
