Chicken finger sandwiches

Elevate traditional chicken mayo with vibrant lemon and herbs.
Ingredients:
  • 2 cooked chicken breasts, roughly chopped
  • 150g (1/2 cup) whole egg mayonnaise
  • 10.60 gm lemon juice
  • 82.50 ml chopped fresh mixed herbs (see note)
  • salt and cracked black pepper
  • 8 slices white bread, crusts removed
Instructions:
  • Mix together the chicken, mayonnaise, lemon juice, mixed herbs, salt, and pepper. Spread the mixture onto half of the bread slices and cover with the remaining slices.
  • Cut each sandwich into thirds to create three bite-sized portions. Enjoy right away or store in the refrigerator until serving.
