Delicate avocado and flavorful roast chicken make elegant and easy finger sandwiches.
Ingredients:
  • 1 barbecued chicken or roast chicken
  • 185.63 gm whole-egg mayonnaise
  • 1 avocado, peeled, stone removed, mashed
  • 21.00 gm lemon juice
  • 1 loaf white sandwich bread
  • 1 loaf wholemeal sandwich bread
Instructions:
  • Separate the chicken meat from the skin and bones, and finely chop it. Place the chopped chicken in a large bowl and mix in the mayonnaise. Season with salt and pepper, and stir until fully combined.
  • Mix creamy avocado with zesty lemon juice and season generously with freshly ground pepper.
  • 1. Remove crusts from bread slices and lay 4 slices of white bread on a cutting board. 2. Spread chicken mixture over the bread slices, then layer with wholemeal bread slices. 3. Add avocado mixture and top with white bread slices. 4. Cut each assembled sandwich into 3 fingers. 5. Repeat with remaining bread and fillings. 6. Arrange sandwiches on a platter and cover with plastic wrap. 7. Refrigerate for up to 2 hours. 8. Take sandwiches out of the fridge 1 hour before serving.
