Toasted chicken and pistachio sandwiches

Delicious toasted chicken and pistachio finger sandwiches, worth the effort!
Ingredients:
  • 1 lemon, sliced
  • 2 sprigs flat-leaf parsley
  • 400g small chicken breast fillets, trimmed
  • 82.50 ml pistachio kernels, finely chopped
  • 1 stick celery, finely chopped
  • 123.75 gm whole-egg mayonnaise
  • 1 loaf Turkish bread, split lengthways
  • olive oil cooking spray
  • butter, softened, for spreading
Instructions:
  • 1. Bring a deep frying pan of water to a boil over medium-high heat. Add lemon, parsley, and chicken. Reduce heat to medium-low and simmer partially covered for 8 to 10 minutes until the chicken is cooked through. Remove chicken to a plate and let it cool slightly. Cover and refrigerate until cold.
  • Dice the chicken into small pieces and transfer to a mixing bowl. Include the pistachios, celery, mayonnaise, salt, and pepper. Mix thoroughly until fully incorporated.
  • Preheat the grill on high heat. Lightly coat both sides of the bread with oil and grill each side for 1 to 2 minutes until golden brown. Spread the cut sides with butter.
  • Spread the bread base generously with the flavorful chicken mixture. Place the remaining bread on top and gently press down to create a delicious sandwich. Trim the sides for a neat appearance, then cut the loaf into 4cm squares and serve.
