Chicken and walnut mayonnaise focaccia

Take these delicious focaccia breads for a perfect picnic!
Ingredients:
  • 61.88 gm whole-egg mayonnaise
  • 13.80 gm walnuts, chopped
  • 1 x 300g focaccia bread, halved, split
  • 75.00 gm basil pesto
  • 60g baby spinach
  • 200g smoked chicken breast fillet, thinly sliced
Instructions:
  • Mix creamy mayonnaise with crunchy walnuts in a small bowl, then add a pinch of salt and a dash of pepper for a burst of flavor.
  • Grill or toast focaccia until golden. Spread pesto on cut sides. Layer spinach, chicken, dollop of walnut mayo, and top with focaccia. Enjoy!
