Chicken and pineapple salad

Elevate chicken salad with tropical pineapple for a burst of flavor.
Ingredients:
  • 2 single free range chicken breast fillets
  • Salt & freshly ground pepper
  • 18.40 gm oil
  • 1/4 pineapple, peeled, cut into thin 3cm pieces
  • 2 celery stalks, cut into thin diagonal slices
  • 40.00 gm traditional egg mayonnaise
  • 1 butter lettuce, leaves separated, washed
  • 30g walnut
Instructions:
  • Butterfly the chicken fillets and season generously with salt and pepper.
  • In a non-stick frying pan over medium-high heat, sear the chicken for 2-3 minutes per side until golden brown and fully cooked. Allow it to cool on a plate before slicing thinly.
  • Mix the pineapple, celery, chicken, and mayonnaise together. Present the salad on lettuce leaves and sprinkle with walnuts.
