Easy honey and soy chicken skewers with pineapple salad

Delicious chargrilled sticky chicken skewers paired with vermicelli noodle and pineapple salad.
Ingredients:
  • 12 Chicken Skewers Honey & Soy
  • 150g rice vermicelli noodles
  • 30g watercress sprigs or baby rocket leaves
  • 350g pineapple, peeled, cored, thinly sliced lengthways
  • 62.50 ml mint leaves
  • 1 Lebanese cucumber, halved lengthways, thinly sliced
  • 1/2 small red onion, very thinly sliced
  • 80ml dressing
  • 6.00 gm sesame seeds, toasted
Instructions:
  • Preheat a barbecue grill or chargrill to medium-high. Grill the chicken skewers, turning occasionally, until cooked through, about 10-15 minutes.
  • Place the noodles in a heatproof bowl and cover with boiling water. Let them sit for 3 minutes until softened. Then, drain them well.
  • In a large bowl, mix together the noodles, watercress or rocket, pineapple, mint, cucumber, and onion. Season with your favorite seasonings.
  • Place the chicken skewers and noodle salad elegantly on a big serving plate. Drizzle the dressing over the salad and sprinkle sesame seeds on the chicken skewers before serving.
