Quick and delicious chicken udon noodles with honey and soy sauce.
Ingredients:
  • 500g chicken breast fillets, trimmed, cut into strips across the grain
  • 60mls (1/4 cup) salt-reduced soy sauce
  • 57.20 gm honey
  • 9.20 gm peanut oil
  • 2 garlic cloves, peeled, thinly sliced
  • 4cm piece fresh ginger, peeled, cut into thin strips
  • 2 medium carrots, cut into batons
  • 1 medium leek, trimmed, cut into thin 5cm strips, washed, dried
  • 2 200g pkts Udon noodles (Trident brand)
Instructions:
  • Marinate chicken in a flavorful blend of soy sauce and honey for 5 minutes in a medium bowl.
  • Pat dry chicken and set aside the marinade. Heat half of the oil in a large wok or frying pan over high heat. Cook half of the chicken in the wok for 2 minutes until cooked. Remove chicken from the wok and repeat with the remaining oil and chicken.
  • Toss the garlic, ginger, and carrots into the wok and stir-fry intermittently for 3-4 minutes. Then, add the leek and stir-fry for an additional 2 minutes.
  • Toss noodles and reserved marinade together until combined. Cook covered for 2 minutes until noodles soften, adding water if needed. Uncover, add chicken back to wok, toss until heated through. Serve hot.
