Try this delicious and quick chicken coconut stir-fry - packed with protein!
Ingredients:
  • 340g pkt vermicelli noodles or 250g rice noodles
  • 2 chicken breast fillets, thinly sliced
  • 400g pkt Family Vegetable Stir-Fry
  • 180g pkt Coconut & Lime Thai Stir-Fry Sauce
  • Coriander sprigs, to serve
Instructions:
  • Prepare the noodles according to package instructions and ensure they are well drained.
  • Heat a wok or large non-stick pan over high heat. Stir-fry chicken in 2 batches for 4 minutes until cooked through.
  • Add the chicken back to the wok or pan along with the vegetables and stir-fry sauce. Stir-fry for 1-2 mins until heated through, then toss in the noodles and stir-fry until everything is well combined and heated through.
  • Spoon the chicken mixture into individual bowls and garnish with fresh coriander before serving.
