Ingredients:
  • 400g pkt Plain Crumb Chicken Burgers
  • 340g pkt Asia Thin Egg Noodles
  • 18.40 gm vegetable oil
  • 2 celery sticks, trimmed, sliced diagonally
  • 1 large carrot, peeled, cut into matchsticks
  • 100g (2/3 cup) frozen corn
  • 150g green beans, trimmed, sliced diagonally
  • 2 garlic cloves, crushed
  • 2 tsp finely grated fresh ginger
  • 2 green shallots, sliced diagonally, plus extra to serve
  • 160ml (2/3 cup) honey soy sauce
  • 20.00 ml sriracha
Instructions:
  • Preheat your oven to 220C/200C fan forced. Line a large baking tray with baking paper and arrange the chicken on it. Bake for 15 minutes or until golden and fully cooked.
  • Cook the noodles according to the instructions on the packet.
  • In a large deep frying pan over high heat, heat the oil until sizzling. Quickly stir-fry celery and carrot until slightly tender, about 2-3 minutes. Add corn, beans, garlic, and ginger, continuing to stir-fry for another 2 minutes. Finally, add shallots and noodles, and toss everything together until well combined.
  • In a small bowl, mix together the honey soy sauce, sriracha, and 80ml (⅓ cup) water. Pour half of the sauce over the noodle mixture. Toss for 2 minutes until noodles are heated through and coated evenly.
  • Cut the chicken into strips and coat them with the sauce mixture. Serve the noodle mixture in bowls, topped with the chicken and extra shallots.
