Indulge in a fragrant bowl of vermicelli and tender chicken coated in flavorful satay sauce.
Ingredients:
  • 225g dried rice vermicelli noodles
  • 1 large telegraph cucumber, peeled, halved lengthways, seeds removed
  • 2 (about 260g) poached chicken breasts, cooled, shredded
  • 80ml satay sauce
  • 4 spring onions, finely sliced on the diagonal
  • 125.00 ml picked coriander leaves
Instructions:
  • Soak noodles in boiling water for 4 minutes or as per packet directions. Rinse with cold water, drain well, and distribute among 4 bowls. Julienne the cucumber and garnish the noodles.
  • Place succulent pieces of chicken on a plate, drizzle generously with flavorful satay sauce, and finish with a sprinkle of fresh spring onions and coriander for a vibrant finish.
