Wholesome veggie stir-fry perfect for the family.
Ingredients:
  • 36.80 gm vegetable oil
  • 2cm-piece fresh ginger, thinly sliced
  • 2 spring onions, thinly sliced reserving green tops for garnish
  • 5 Grill RSPCA Approved Honey Soy Chicken Skewers, chicken removed from skewers, marinade reserved
  • 1 broccoli, cut into florets
  • 1 red capsicum, thinly sliced
  • 250.00 ml frozen Corn Kernels
  • 48.80 gm Brand Oyster Sauce
  • Steamed jasmine rice, to serve
Instructions:
  • Heat the oil in a wok until sizzling. Quickly stir-fry the ginger and onion until aromatic. Toss in the chicken and stir-fry until lightly browned, about 4 minutes.
  • Toss in the broccoli, capsicum, and corn into the wok. Season the mixture and stir-fry for 2 minutes until almost tender. Pour in the reserved marinade and oyster sauce, stir-fry for another minute until bubbling.
  • Portion the rice into individual bowls, ladle the delicious stir-fry over the rice, and finish by delicately sprinkling the reserved spring onion tops on top for a burst of fresh flavor.
