Zesty lime elevates flavors in simple chicken stir-fry.
Ingredients:
  • 60ml soy sauce
  • 42.00 gm lime juice
  • 57.20 gm honey
  • 500g pkt Australian Chicken Breast Stirfry
  • 18.20 gm peanut oil
  • 1 carrot, peeled, thinly sliced
  • 1 red capsicum, seeded, thinly sliced
  • 1 bunch asparagus, woody ends trimmed, coarsely chopped
  • 150g snow peas, trimmed
  • Coriander leaves, to serve
  • Thinly sliced spring onion, to serve
  • Steamed jasmine rice, to serve
  • Lime wedges, to serve
Instructions:
  • In a large bowl, mix together soy sauce, lime juice, honey, and garlic. Pour half of the mixture into a separate jug. Add the chicken to the bowl with the remaining mixture and stir well. Let it sit for 10 minutes to enhance the flavors.
  • In a sizzling wok, swirl in half the oil over high heat. Quickly stir-fry the chicken mixture in batches for 3 minutes until beautifully golden and fully cooked. Then, transfer the flavorful chicken to a heatproof bowl.
  • Heat the remaining oil in the wok or frying pan. Quickly stir-fry the carrot until just tender. Add the capsicum and asparagus, stir-frying until just tender. Reintroduce the chicken, snow peas, and reserved soy sauce mixture, stir-frying until the vegetables are tender.
  • Garnish the stir-fry with fresh coriander and sliced spring onion. Serve alongside fluffy rice and zesty lime wedges.
