Homemade chicken and vegetable stir-fry noodles, inspired by the classic takeaway favorite.
Ingredients:
  • 125ml soy sauce
  • 2 tsp sesame oil
  • 2.5cm piece fresh ginger, peeled, grated
  • 1 lime, juiced
  • 600g chicken thigh fillets, cut into strips
  • 450g pkt Singapore noodles
  • 500.00 ml finely shredded cabbage
  • 2 carrots, peeled, coarsely grated
  • 1 bunch baby bok choy, washed, dried, leaves shredded
  • 1 bunch coriander, leaves picked
  • 24.00 gm sesame seeds, toasted
Instructions:
  • In a jug, mix together soy sauce, sesame oil, olive oil, garlic, ginger, and lime juice. Place chicken in a bowl and add 1/4 cup of the marinade. Toss to coat the chicken. Let it marinate for 15 minutes (or longer if desired).
  • 1. Place the noodles in a large heatproof bowl and cover with boiling water. Let sit for 5 minutes, then drain well and separate the noodles with your hands. Allow to cool.
  • Combine the cabbage, carrots, bok choy, coriander, and sesame seeds with the noodles and toss together.
  • Preheat a hot barbecue plate. Drain chicken and discard marinade. Grill chicken for 3-4 minutes.
  • Combine the chicken and the marinade with the noodles and mix well.
