Quick and satisfying Asian chicken dish to satisfy hunger.
Ingredients:
  • 300g pkt thin egg noodles
  • 9.20 gm peanut oil
  • 150g snow peas, diagonally halved
  • 1 carrot, peeled, diagonally thinly sliced
  • 1 red capsicum, seeded, thinly sliced
  • 10.00 gm mild curry powder
  • 500.00 ml coarsely shredded roast chicken
  • 48.80 gm oyster sauce
  • Green onions, thinly sliced, to serve
Instructions:
  • Place the noodles in a large heatproof bowl and cover with boiling water. Gently separate the noodles using a fork. Let them soak for 5 minutes, then drain well.
  • Heat oil in a wok over high heat. Stir-fry snow peas, carrot, and capsicum for 1-2 minutes until tender-crisp. Add curry powder and stir-fry for 1 minute until aromatic. Toss in chicken, oyster sauce, and noodles. Cook for 2-3 minutes until heated through and well combined.
  • Serve the noodles in individual bowls and garnish with green onions before enjoying right away.
