Quick and delicious Singapore noodles ready in under 25 minutes!
Ingredients:
  • 40.00 ml kecap manis
  • 2.50 gm mild curry powder
  • 1 garlic clove, crushed
  • 2cm piece ginger, peeled, grated
  • 4 chicken thigh fillets, trimmed, thinly sliced
  • 12.00 gm sesame seeds
  • olive oil cooking spray
  • 1/4 Chinese cabbage, shredded
  • 2 carrots, cut into long, thin strips
  • 1 red capsicum, thinly sliced
  • 4 green onions, thinly sliced
  • 220g packet Singapore noodles
Instructions:
  • In a small bowl, mix together kecap manis, curry powder, garlic, ginger, and 1 tablespoon of water. Place the chicken in a ceramic bowl, add 1 tablespoon of the marinade to the chicken, and stir well to coat. Cover the remaining marinade and set it aside for later use.
  • 1. Preheat a wok over high heat, then toast sesame seeds until golden, about 2 minutes. Transfer to a bowl. 2. Spray wok with oil and stir-fry the first batch of chicken until golden, about 3 minutes. Transfer to the bowl with the sesame seeds. 3. Stir-fry the remaining chicken in the wok with oil until golden.
  • Spritz wok with oil once more, then toss in cabbage, carrot, capsicum, and half of the onions.
  • Stir-fry cabbage until it begins to wilt in a wok for 2 minutes. Add noodles, chicken, reserved marinade, and toasted sesame seeds. Stir-fry for another 2 minutes or until heated through. Divide the mixture between bowls, sprinkle with remaining onions, and serve.
