Shortcut to a gourmet steak dinner.
Ingredients:
  • 4 heart-smart scotch fillet steaks
  • 3/4 cup red wine and garlic marinade
  • 1kg Desiree potatoes, cut into 2cm cubes
  • 1 small red onion, halved, thinly sliced
  • 77.55 gm light sour cream
  • 42.00 gm lime juice
  • 82.50 ml mint leaves, shredded
  • 200g button mushrooms, sliced
  • Salad leaves, to serve
Instructions:
  • Place the steaks in a ceramic dish and generously pour the flavorful marinade all over them. Be sure to turn the steaks to ensure they are fully coated. Cover the dish and let it marinate in the refrigerator for a brief 10 minutes to enhance the delicious flavors.
  • 1. Start by adding potatoes to a saucepan and covering them with cold water. 2. Bring the water to a boil over high heat, then lower the heat to medium and simmer for 12 minutes until the potatoes are tender. 3. Drain the potatoes and transfer them to a large bowl. 4. Add onion to the bowl. 5. Whisk together sour cream, lime juice, mint, salt, and pepper. 6. Pour this mixture over the potatoes and onions. 7. Gently toss everything together to combine well.
  • Preheat a barbecue plate on high heat, then reduce to medium-high. Cook steaks for 3 to 4 minutes on each side for medium doneness. Sauté mushrooms for 3 minutes until tender. Serve with potato salad and a fresh salad.
