Hearty meatball soup to satisfy and warm you up!
Ingredients:
  • 375g extra-lean Italian-style sausages
  • 18.20 gm olive oil
  • 1 medium red onion, chopped
  • 1 medium red capsicum, chopped
  • 20.00 ml chicken style stock powder
  • 400g can chopped tomatoes (with basil and garlic)
  • 125.00 ml dried macaroni pasta
  • 300g broccoli, cut into small florets
  • 20.00 ml finely chopped fresh basil leaves
  • Finely grated parmesan cheese, to serve
Instructions:
  • Form savory sausage meat into bite-sized flavorful balls.
  • In a large saucepan over medium heat, warm oil. Add onion and capsicum, cook until onion softens, about 5 minutes. Stir in stock powder, tomato, and 5 cups cold water, bring to a boil. Add meatballs and pasta, then reduce heat to medium-low. Simmer for 10 minutes. Add broccoli, simmer for an additional 5 minutes until pasta is tender and meatballs are cooked through. Finish by stirring in basil. Serve with a sprinkle of parmesan.
