Italian wedding soup: Meatball, veggie, and orzo pasta in flavorful broth. Comforting and nourishing.
Ingredients:
  • 0.5 pound extra-lean ground beef
  • 1 large egg, lightly beaten
  • 2 tablespoons dry bread crumbs
  • 1 tablespoon grated Parmesan cheese
  • 0.5 teaspoon onion powder
  • 5.75 cups chicken broth
  • 2 cups thinly sliced escarole
  • 1 cup uncooked orzo pasta
  • 0.33333334326744 cup finely chopped carrot
Instructions:
  • Mix together ground beef, egg, bread crumbs, Parmesan cheese, basil, and onion powder in a bowl.
  • Roll the beef mixture into small 3/4-inch balls and place them on a tray lined with parchment paper.
  • In a large pot, bring the broth to a boil over medium-high heat. Add escarole, orzo, carrot, and meatballs. Bring back to a boil. Reduce heat to medium and simmer gently, stirring occasionally to avoid sticking, until the orzo is al dente, about 10 minutes.
  • Indulge in the dish while it's still piping hot!
