Elevate Italian wedding soup with meatballs and veggies by incorporating seasoned rice for a convenient one-skillet meal.
Ingredients:
  • 1 pound ground pork sausage
  • 0.25 cup diced carrots
  • 0.25 cup diced celery
  • 0.25 cup minced onion
  • 2 cups reduced sodium chicken broth
  • 1.5 cups fresh baby spinach leaves
  • 1 (5.4 ounce) package Knorr® Rice Sides™ - Herb & Butter
  • Shredded Parmesan cheese, for topping
Instructions:
  • Form sausage into tiny 1/2-inch meatballs. Cook in a large non-stick skillet until cooked through, about 8-12 minutes. Place on a paper-towel-lined plate, reserving 1 tablespoon of grease in the skillet.
  • In a skillet, sauté carrots, celery, and onion until tender over medium heat for about 10 minutes. Stir in chicken broth, baby spinach, and Knorr® Rice Sides™ - Herb & Butter, and follow package directions for cooking.
  • Return the meatballs to the skillet and heat through for about 5 minutes. Top with Parmesan cheese before serving.
