Cozy and comforting dish using leftover rice and pasta sauce, customizable with your favorite ingredients like jarred sauce or family meatball recipe. Perfect for chilly nights and soul-warming meals.
Ingredients:
  • 1 cup lentils
  • 1.3333333730698 quarts water, divided
  • 0.66666668653488 cup uncooked long grain white rice
  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley
  • 3 tablespoons Italian bread crumbs
  • salt, to taste
  • ground black pepper, to taste
  • 1 quart tomato sauce
  • 0.25 cup grated Parmesan cheese for topping
Instructions:
  • In a pot, combine lentils and 3 cups of water. Bring to a boil, then simmer on low for 20 minutes until lentils are tender. Drain and set aside.
  • Combine rice and 1 1/3 cups of water in a pot and bring to a boil. Once boiling, lower heat, cover, and simmer for 20 minutes.
  • In a skillet, heat oil over medium heat. Mix ground beef, egg, garlic, 1 tablespoon Parmesan cheese, parsley, bread crumbs, salt, and pepper in a bowl. Shape mixture into 1-inch meatballs. Cook meatballs in the skillet for about 5 minutes until browned all over.
  • In a large pot, bring together the tomato sauce and 4 cups of water until boiling. Add the browned meatballs, cooked lentils, and rice. Bring it back to a boil, then simmer over medium-low heat for 30 minutes. Sprinkle with the rest of the Parmesan cheese before serving.
