Italian sausage and kale soup

Delicious and hearty Italian sausage and kale soup, perfect for a quick and satisfying meal. Don't forget to save some for tomorrow's lunch!
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 400g pork and fennel sausages, casings removed
  • 1 brown onion, finely chopped
  • 1 carrot, peeled, finely chopped
  • 1 baby fennel bulb, finely chopped
  • 1 stick celery, finely chopped
  • 3 garlic cloves, crushed
  • 1 litre (4 cups) Campbell's Italian soup base
  • 250ml (1 cup) water
  • 400g can brown lentils, rinsed, drained
  • 1 small bunch Tuscan kale, leaves thinly sliced
  • Parmesan toast, to serve (optional)
Instructions:
  • In a large saucepan over medium heat, warm 2 teaspoons of oil. Add the sausage meat and cook for 6 minutes, breaking it up with a wooden spoon until browned. Transfer the cooked sausage to a bowl using a slotted spoon and set aside.
  • In the same pan, heat the remaining oil over medium heat, then add onion, carrot, fennel, celery, and garlic. Sauté for 8 minutes until softened. Pour in the soup base and water, cover, and bring to a simmer. Add lentils and sausage meat, then simmer covered for 2 minutes. Finally, mix in the kale, cover, and simmer for 2 more minutes until just wilted. Serve with optional parmesan toast.
