Creamy Italian-inspired sausage and kale soup with pork sausage, potatoes, and nutrient-packed kale for a hearty and rich flavor.
Ingredients:
  • 1 pound bulk Italian sausage
  • 4 cups half-and-half
  • 3 cups cubed potatoes
  • 2 cups low-sodium chicken broth
  • 2 cups whole milk
  • 1 medium onion, chopped
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes, or more to taste
  • 0.5 teaspoon ground black pepper
  • 2 cups kale, torn into bite-sized pieces
Instructions:
  • In a large soup pot over medium-high heat, cook and crumble the sausage until browned, about 10 minutes. Discard grease after draining.
  • Combine half-and-half, potatoes, chicken broth, milk, onion, oregano, and pepper flakes with sausage. Bring to a boil, then simmer on low until potatoes are tender, around 30 minutes.
  • Sprinkle in freshly ground black pepper for a touch of warmth. Add the kale and gently simmer until it is tender, about 10 to 15 minutes longer.
