Indulge in a hearty and flavorful Italian sausage, potato, and kale soup inspired by Olive Garden's Zuppa Toscana.
Ingredients:
  • 1 pound bulk mild Italian sausage
  • 1.25 teaspoons red pepper flakes
  • 4 slices bacon, cut into 1/2 inch pieces
  • 1 large onion, diced
  • 1 tablespoon minced garlic
  • 8.75 cups chicken broth
  • 6 potatoes, thinly sliced
  • 6 cups chopped fresh kale
  • 1 cup heavy whipping cream
Instructions:
  • In a Dutch oven over medium-high heat, brown and crumble Italian sausage with red pepper flakes for 10 to 15 minutes. Transfer the flavorful mixture to a bowl.
  • Crisp up the bacon in the Dutch oven over medium heat for about 10 minutes. Once done, remove excess fat, keeping a few tablespoons of drippings in the pot.
  • Saute onion and garlic with bacon until onions are soft and translucent, approximately 5 minutes. Add chicken broth and bring to a boil. Mix in potatoes and kale and simmer until potatoes are tender and soup is flavorful, roughly 15 minutes.
  • Combine the sausage and heavy whipping cream into the soup and simmer over medium heat until the soup is hot throughout, approximately 5 minutes.
