Super-quick pesto pasta

Whip up a delicious six-ingredient pasta dish in just 30 minutes!
Ingredients:
  • 200g jar sun-dried tomato strips in oil
  • 375g dried shell pasta
  • 3 garlic cloves, crushed
  • 62.50 ml pine nuts, toasted (see note)
  • 125.00 ml fresh basil leaves, torn
  • 82.50 ml finely grated parmesan cheese
Instructions:
  • Separate the tomatoes from the oil, saving 1/4 cup. Finely chop the drained tomatoes. Cook the pasta in a large pot of boiling salted water according to package instructions until tender. Save 2 tablespoons of the cooking liquid before draining.
  • Add the cooked pasta back to the pan along with the garlic, tomatoes, pine nuts, fresh basil, grated parmesan, reserved oil, and reserved cooking liquid. Give everything a good toss to mix well, then season with salt and pepper before serving.
