Versatile soup with customizable ingredients - swap chickpeas for cannellini, black, or kidney beans, choose spinach over kale, and adjust spices to taste.
Ingredients:
  • 1 medium onion, diced
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 large sweet potato, diced
  • 3 cups Hillshire Farm® Smoked Sausage, sliced into 1-inch rounds
  • 1 (19 ounce) can chickpeas
  • 1 teaspoon paprika, sweet or smoked
  • 0.5 teaspoon ground coriander
  • 1 teaspoon ground chipotle pepper
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt, or to taste
  • 6 cups low-sodium chicken stock
  • 4 cups kale (or spinach)
  • 1 teaspoon Crumbled feta cheese or goat cheese
  • 1 teaspoon Freshly ground black pepper, for garnish
Instructions:
  • In a large pot over medium heat, generously drizzle olive oil. Cook diced onion until they release moisture, about 5 minutes. Mix in garlic, sweet potato, sausage, and chickpeas. Sprinkle in paprika, coriander, chipotle powder, cumin, and salt. Cook for an additional 5 minutes, stirring occasionally.
  • Add stock to the pot and simmer until the sweet potato is soft, about 10 to 15 minutes. Taste and adjust seasoning with salt. Add kale (or spinach) and cook for 1 minute until wilted. Serve in bowls and sprinkle with cheese and freshly ground pepper, if desired.
