Smokey beef and sausage meatloaf with zesty salsa, tangy BBQ sauce, and malt vinegar, slow-smoked to perfection.
Ingredients:
  • 1 (8 ounce) jar chunky salsa
  • 4 eggs
  • 1 onion, chopped
  • 0.25 cup barbeque sauce
  • 0.25 cup mustard
  • 0.25 cup ketchup
  • 0.25 cup Parmesan cheese
  • 2 tablespoons sriracha sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons malt vinegar
  • 1 (1.25 ounce) packet meatloaf seasoning mix
  • 1 tablespoon salt
  • 1 tablespoon garlic powder
  • 1 tablespoon ground black pepper
  • 5 pounds ground beef, broken into small chunks
  • 2 pounds sausage, broken into small chunks
  • 1 cup bread crumbs, or more as needed
  • 2 tablespoons barbeque glaze (such as Jack Daniel's®)
  • 2 tablespoons barbeque sauce
  • 2 tablespoons mustard
  • 2 tablespoons ketchup
  • 1 teaspoon Worcestershire sauce
Instructions:
  • Combine salsa, eggs, onion, 1/4 cup BBQ sauce, 1/4 cup mustard, 1/4 cup ketchup, Parmesan cheese, sriracha sauce, soy sauce, malt vinegar, meatloaf seasoning mix, salt, garlic powder, and black pepper in a large bowl. Mix in beef and sausage until fully combined. Incorporate bread crumbs as needed to bind the meatloaf mixture.
  • Prepare the container by lining it with plastic wrap. Press the meatloaf mixture firmly into the container and refrigerate until firm, which will take 3 to 4 hours.
  • Preheat your smoker to 250 degrees F (121 degrees C following the manufacturer's instructions.
  • Cover a wire rack with aluminum foil and place it inside a lined cake pan. Gently transfer the meatloaf onto the foil-covered wire rack using plastic wrap.
  • Cook the meatloaf in a smoker until fully cooked, approximately 3 hours.
  • In a small bowl, mix barbeque glaze, 2 tablespoons each of barbeque sauce, mustard, and ketchup, along with Worcestershire sauce. Use this flavorful mixture to baste the meatloaf.
  • Smoke the dish further until an instant-read thermometer placed in the center shows a temperature of 185 degrees F (85 degrees C), approximately 1 to 2 more hours.
