Monster Cookie Ice Cream Sandwiches

Summer party treat: Monster cookie ice cream sandwiches - oatmeal cookies with vanilla ice cream, chocolate chips, and peanut butter.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Oatmeal Cookie Mix
  • 1/2 cup butter, softened
  • 1 tablespoon water
  • 1/2 cup raisins
  • 3 cups vanilla ice cream
  • 1/4 cup M&M's® chocolate candies
  • 1/4 cup semisweet chocolate chips
  • 3 tablespoons creamy peanut butter
Instructions:
  • Combine ice cream, chocolate candies, chocolate chips, and peanut butter in a medium bowl. Chill in the freezer until solid, approximately 1 hour.
  • Preheat the oven to 375°F (or 350°F for dark or nonstick cookie sheets). In a large bowl, mix together the cookie mix, butter, water, and egg until just combined. Gently fold in the raisins.
  • Spoon cookie dough in rounded tablespoonfuls onto parchment-lined baking sheets.
  • Bake for 11 to 13 minutes until lightly golden brown. Let them cool for 1 minute on the cookie sheets, then transfer to cooling racks. Cool completely, about 30 minutes.
  • Spread a generous scoop of the ice cream mixture onto the underside of half of the cooled cookies. Top with another cookie, bottom side down, creating a sandwich. Arrange the cookie sandwiches on a baking sheet and freeze until firm, approximately 1 hour before serving.
