Creamy Italian soup with smoked sausage, garlic, and kale. Flavor-packed Zuppa Toscana.
Ingredients:
  • 1 (16 ounce) package smoked sausage
  • 2 potatoes, cut into 1/4-inch slices
  • 0.75 cup chopped onion
  • 6 slices bacon
  • 1.5 teaspoons minced garlic
  • 2 cups kale - washed, dried, and shredded
  • 2 tablespoons chicken bouillon powder
  • 1 quart water
  • 0.33333298563957 cup heavy whipping cream
Instructions:
  • Preheat the oven to a toasty 300°F (150°C).
  • Lay the sausage links on a baking sheet and bake in the preheated oven for 25 minutes, or until fully cooked. Slice each link in half lengthwise, then cut into 1/2-inch angled slices. Enjoy!
  • In a large saucepan over medium heat, sizzle bacon with onions until bacon is crispy and onions are tender. Remove bacon, crumble it, and set aside.
  • Sauté garlic for a minute until fragrant. Stir in bouillon powder, water, and potatoes and let it simmer for 15 minutes.
  • Combine crispy crumbled bacon, savory sausage, fresh kale, and rich cream in the pot. Let it gently simmer for 4 minutes before serving.
