Keto-friendly zuppa Toscana with bacon, Italian sausage, and spinach, perfect for cozy nights.
Ingredients:
  • 1 pound mild Italian sausage
  • 1.25 teaspoons red pepper flakes
  • 4 slices bacon, cut into 1/2-inch pieces
  • 1 large onion, diced
  • 1 tablespoon minced garlic
  • 5 (13.75 ounce) cans low-sodium chicken broth
  • 1 cup cauliflower florets
  • 1 cup heavy cream
  • 0.25 bunch spinach, tough stems removed
Instructions:
  • In a hot Dutch oven, sizzle sausage with red pepper flakes until beautifully browned and cooked through, approximately 10 minutes. Remove any excess grease, then transfer the flavorful sausage to a waiting bowl.
  • Reduce heat to medium and cook bacon in the pot until crisp for about 10 minutes. Leave a few tablespoons of drippings in the pot. Add onions and garlic; cook until onions are soft and translucent for about 5 minutes. Pour in chicken broth and bring to a boil. Add cauliflower and boil until fork-tender for around 20 minutes.
  • Lower the heat to medium and add heavy cream and cooked sausage, heating everything through. Just before serving, stir in the spinach.
